It will focus largely on the practical skills needed to get you started in a professional kitchen but will also ensure you develop the skills necessary to begin immediate work in customer facing roles such as bar and wine service, barista skills and many types of food service.
It is a one-year programme designed to help you make an informed decision about whether the catering and hospitality industry is for you while at the same time ensuring that you pick up transferable skills and make yourself employable in this fun and interesting industry from the outset. The demand for trained people in this sector will give you the edge over your peers and the confidence to embrace the world of work possibly for the first time.
One of the main things that you will learn is the journey of food from the point of delivery to presentation to the customer. By understanding this you will see where you would like to fit in amongst the range of jobs that are needed to provide this service. Many students find their interest moves from ‘front of house’ to ‘back of house’ or vice versa and this programme ensures that you understand all aspects of the responsibility for health, safety, and security of a service team and a dining room full of customers. Industry leaders will always say how important it is to understand the ‘big picture’ in order to be able to offer a fantastic customer experience - this course gives you the opportunity to see what is needed to do that and if you get a buzz out of it, then catering and hospitality is for you!
This course is really ‘hands on’ and you will find yourself busy every day, developing your confidence and social skills and meeting lots of new people.
Applicants should have a minimum 6 points at GCSE or equivalent and selection is subject to a successful interview at which the applicant needs to show enthusiasm and an interest in the programme and the catering industry.
This qualification is assessed continually through observation of performance in a realistic working environment, where you will agree a plan with your tutors for the assessment of your skills.
Knowledge and understanding are assessed through a blend of written, oral and online questioning.
On completion of this qualification candidates may progress into employment or move to Level 2 Diploma in Professional Cookery or Level 2 Diploma in Professional Food and Beverage Service.
